Ingredients

  • 1 cup strawberries, hulled
  • 1 cup green grapes, seedless
  • 1 cup red grapes, seedless
  • 1 cup black grapes, seedless
  • 2 cups granulated sugar
  • 1 cup water
  • Wooden skewers, as needed

Instructions

  1. Lay out parchment paper on a tray and prep your fruit by washing, drying, and skewering.
  2. In a heavy-bottom saucepan, combine sugar and water. Heat over medium-high without stirring.
  3. Monitor with a candy thermometer and heat until it reaches 300°F (hard crack stage).
  4. Once ready, tilt the pan and dip each fruit skewer into the sugar to coat completely. Let excess drip off.
  5. Place coated skewers on parchment paper to cool and harden.
  6. Serve once the sugar shell is fully set, usually within minutes.

Notes

  • Pat fruit completely dry to ensure sugar sticks well.
  • Do not stir sugar while boiling to avoid crystallization.
  • Work quickly as sugar hardens fast after reaching temperature.
