Viral Sushi Bake Cups

Bite-sized layers of seasoned rice, creamy spicy tuna, and crispy seaweed, these Viral Sushi Bake Cups are the ultimate crowd-pleasing snack or appetizer with bold flavor and a fun twist on classic sushi.

Ingredients

  • 2 cups cooked short-grain rice
  • 1 tablespoon rice vinegar
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1 can (5 oz) canned tuna, drained
  • 3 tablespoons Kewpie mayo
  • 1 tablespoon sriracha
  • 1 teaspoon soy sauce
  • 6 nori sheets, cut into quarters
  • 2 green onions, finely chopped
  • 2 tablespoons fried shallots
  • Cooking spray or oil, for greasing

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a muffin tin with oil or cooking spray.
  2. Mix the cooked rice with rice vinegar, sugar, and salt. Let cool slightly.
  3. In a separate bowl, combine tuna, Kewpie mayo, sriracha, and soy sauce until creamy.
  4. Place two overlapping nori squares in each muffin cup, shiny side down.
  5. Press 1–2 tablespoons of rice into each cup, then top with the tuna mixture.
  6. Bake for 12–15 minutes until nori edges are crisp and tops are golden.
  7. Drizzle with extra mayo and sriracha, then sprinkle with green onions and fried shallots.
  8. Gently remove from muffin tin and serve warm.

Notes

  • Use a damp spoon to press rice easily into the cups.
  • Chill rice before assembling for better texture.
  • Add sesame seeds for an extra layer of flavor and crunch.
