Vegetable Chowder

This creamy vegetable chowder is a comforting, hearty soup made with tender potatoes, sweet carrots, crunchy corn, and fresh broccoli in a rich, flavorful broth. Perfect for cozy nights or meal prep, it’s customizable and full of flavor.

Ingredients

  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 large yellow onion, diced
  • 3 garlic cloves, minced
  • 2 large carrots, peeled and diced
  • 2 celery stalks, diced
  • 2 medium Yukon Gold potatoes, diced
  • 2 cups broccoli florets
  • 1 cup corn kernels (fresh or frozen)
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons all-purpose flour
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheddar cheese (optional)

Instructions

  1. Place a large soup pot over medium heat and let it warm up for a minute.
  2. Add butter and olive oil to the pot. Once melted, add onions, celery, and carrots. Sauté for 5 minutes until softened. Add garlic and cook for another minute.
  3. Sprinkle flour over the sautéed vegetables and stir constantly for about 2 minutes until absorbed and slightly golden.
  4. Slowly pour in the vegetable broth, stirring constantly. Add potatoes, corn, broccoli, salt, and pepper.
  5. Bring to a simmer, cover, and cook for 15 to 20 minutes until vegetables are tender.
  6. Reduce heat and stir in the cream. Let it warm through, then remove from heat and stir in shredded cheese if using.
  7. Ladle into bowls, garnish if desired, and serve hot.

Notes

  • Dice vegetables evenly to ensure even cooking.
  • Add cream off heat to avoid curdling.
  • Refrigerate leftovers in an airtight container for up to 4 days.
  • Blend part of the soup for a thicker texture if desired.
