Vanilla Almond Cake

A soft, moist Vanilla Almond Cake with layers of creamy frosting and the irresistible aroma of almond and vanilla. Perfect for celebrations or everyday indulgence.

Ingredients

  • 2 ½ cups all-purpose flour
  • 2 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 ¾ cups granulated sugar
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 1 ½ teaspoons almond extract
  • 1 cup whole milk
  • ½ cup slivered almonds (for garnish)
  • 2 cups powdered sugar (for frosting)
  • 8 ounces cream cheese
  • 2 tablespoons heavy cream

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line two 8-inch round cake pans with parchment paper.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In a separate large bowl, cream the butter and sugar until light and fluffy. Add eggs one at a time, then mix in vanilla and almond extract.
  4. Alternately add the dry ingredients and milk to the creamed mixture, beginning and ending with the dry ingredients. Mix just until combined.
  5. Divide the batter evenly into prepared pans and tap lightly on the counter.
  6. Bake for 30–35 minutes, or until a toothpick inserted comes out clean. Let cool in pans for 10 minutes, then transfer to a wire rack.
  7. For the frosting, beat cream cheese until smooth. Add powdered sugar, vanilla, and heavy cream and beat until fluffy.
  8. Frost cooled cake layers and garnish with slivered almonds. Chill before slicing for clean cuts.
