Tuscan Garlic Shrimp Pasta

Creamy and comforting, this Tuscan Garlic Shrimp Pasta blends tender shrimp, rich garlic parmesan sauce, sundried tomatoes, and spinach into a one-pan wonder perfect for weeknights or special occasions.

Ingredients

  • 12 oz fettuccine pasta
  • 1 lb shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 1 cup heavy cream
  • 1 cup parmesan cheese, grated
  • 1/2 cup sundried tomatoes, chopped
  • 2 cups fresh spinach
  • Salt and pepper, to taste
  • Red pepper flakes (optional)

Instructions

  1. Boil pasta in salted water until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil and sauté shrimp for about 2 minutes per side until pink. Remove and set aside.
  3. In the same skillet, melt butter and sauté minced garlic until fragrant.
  4. Add heavy cream and let it simmer for 3–4 minutes. Stir in parmesan, sundried tomatoes, and red pepper flakes if using.
  5. Return pasta and shrimp to the skillet. Add spinach and toss everything until well coated and spinach wilts.
  6. Season with salt and pepper. Top with extra parmesan and serve hot.

Notes

  • Use freshly grated parmesan for best texture and flavor.
  • Reserve some pasta water to adjust sauce consistency if needed.
  • Don’t overcook the shrimp—they cook quickly and stay tender when timed right.
