Stuffed Chicken Breast

Juicy chicken breasts stuffed with a creamy cheese mixture and sweet red peppers, then baked until golden and melty. A flavorful, crowd-pleasing dinner that’s both comforting and impressive.

Ingredients

  • 4 boneless skinless chicken breasts
  • 8 oz cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon garlic powder
  • 2 tablespoons chopped fresh parsley
  • 1 large red bell pepper, thinly sliced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a baking dish.
  2. In a bowl, mix cream cheese, mozzarella, garlic powder, and chopped parsley until smooth.
  3. Butterfly the chicken breasts by slicing them open horizontally without cutting all the way through.
  4. Stuff each chicken breast with the cheese mixture and red bell pepper slices. Secure with toothpicks or kitchen twine.
  5. Heat olive oil in a skillet and sear the stuffed chicken for 2 minutes per side until golden.
  6. Transfer the chicken to the baking dish, season with paprika, salt, and pepper.
  7. Bake uncovered for 20–25 minutes or until the chicken is fully cooked through (internal temp of 165°F).
  8. Optional: Add extra mozzarella on top during the last 5 minutes of baking.
  9. Let rest for 5 minutes before slicing and serving.

Notes

  • Use room temperature cream cheese for easy mixing.
  • Do not overfill the chicken to prevent leaks.
  • Resting after baking keeps the chicken juicy.
  • Pair with a fresh salad or mashed potatoes for a complete meal.
