Spicy Ramen Noodles

Spicy ramen noodles tossed in a bold chili-garlic sauce with chewy noodles, crunchy peanuts, and fresh green onions. Quick to make, deeply comforting, and packed with heat and flavor.

Ingredients

  • 2 packs ramen noodles (about 6 ounces)
  • 3 tablespoons soy sauce
  • 2 tablespoons chili garlic sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon brown sugar
  • 2 cloves garlic, finely minced
  • 1 teaspoon crushed red pepper flakes (optional)
  • 2 green onions, thinly sliced
  • 2 tablespoons roasted peanuts, chopped

Instructions

  1. Bring a medium saucepan of water to a boil and cook the ramen noodles according to package instructions. Reserve a few tablespoons of cooking water, then drain.
  2. In a mixing bowl, whisk together soy sauce, chili garlic sauce, sesame oil, brown sugar, garlic, and red pepper flakes until smooth.
  3. Heat a lightly oiled skillet over medium heat and add the cooked noodles.
  4. Pour the sauce over the noodles and toss continuously until evenly coated, adding reserved cooking water if needed.
  5. Stir in most of the green onions and peanuts.
  6. Serve hot and garnish with remaining green onions and peanuts.

Notes

  • Adjust spice level by increasing or decreasing chili garlic sauce.
  • Add vegetables like spinach or bell peppers for extra texture.
  • Best enjoyed fresh but reheats well with a splash of water.
