Snowball Cheesecake Bites

Creamy no-bake cheesecake bites coated in snowy shredded coconut. These Snowball Cheesecake Bites are festive, easy to make, and absolutely irresistible.

Ingredients

  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup graham cracker crumbs
  • 2 tablespoons melted butter
  • Pinch of salt
  • 1 ½ cups shredded coconut

Instructions

  1. In a large bowl, beat softened cream cheese with powdered sugar and vanilla extract until smooth.
  2. Stir in graham cracker crumbs, melted butter, and a pinch of salt until well combined.
  3. Chill the mixture for 15–20 minutes in the refrigerator to firm it up.
  4. Scoop small portions and roll into balls with your hands or a cookie scoop.
  5. Place the cheesecake balls on a tray lined with parchment paper.
  6. Refrigerate the balls for at least 30 minutes to set.
  7. Roll each chilled ball in shredded coconut until fully coated.
  8. Serve chilled and enjoy.

Notes

  • Use finely shredded coconut for better coating coverage.
  • Add a dash of almond extract for extra flavor.
  • Store leftovers in the fridge for up to 5 days or freeze for longer storage.
  • You can toast the coconut for a nutty variation.
