Slow Cooker Beef Roast

Tender, juicy, and packed with comforting flavor, this Slow Cooker Beef Roast is the ultimate one-pot meal. It’s perfect for busy days when you want dinner to cook itself while filling your home with mouthwatering aromas.

Ingredients

  • 3 to 4 pounds beef chuck roast
  • 2 medium yellow onions, sliced
  • 4 large carrots, cut into chunks
  • 4 garlic cloves, minced
  • 2 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme or a few fresh sprigs
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil
  • 2 tablespoons cornstarch mixed with water (optional)

Instructions

  1. Season the chuck roast with salt and pepper.
  2. Heat olive oil in a skillet and sear the roast on all sides until browned.
  3. Place sliced onions, carrots, and garlic into the bottom of the slow cooker.
  4. Transfer the seared roast to the slow cooker and place on top of the vegetables.
  5. In a bowl, whisk together beef broth, Worcestershire sauce, tomato paste, and thyme. Pour over the roast.
  6. Cover and cook on low for 8–9 hours or high for 4–5 hours until the meat is fork tender.
  7. Remove the roast and let it rest for 10–15 minutes before slicing.
  8. Optional: Strain the cooking liquid and simmer with cornstarch slurry to thicken into gravy.
  9. Slice roast, drizzle with gravy, and serve.

  • Searing the beef first adds deeper flavor.
  • Add mushrooms or potatoes for a heartier meal.
