Ingredients

  • 8 large eggs
  • 300 grams breakfast sausage, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1/4 cup milk
  • 1 small onion, finely diced
  • 1 small bell pepper, diced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 180 degrees Celsius and generously grease a standard muffin tin.
  2. In a large bowl, whisk the eggs and milk together until smooth and slightly frothy.
  3. Evenly divide the cooked sausage, onion, and bell pepper between the muffin cups.
  4. Carefully pour the egg mixture over the fillings, filling each cup about three quarters full.
  5. Sprinkle shredded cheddar cheese evenly over the top of each muffin.
  6. Bake for 20 to 25 minutes until the centers are set and the tops are lightly golden.
  7. Remove from the oven and let rest for a few minutes before removing from the tin.
  8. Serve warm and enjoy.
