Pumpkin Pie Bars

Creamy Pumpkin Pie Bars with a buttery crust, smooth cheesecake center, and warmly spiced pumpkin topping. An easy fall dessert that tastes even better chilled.

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 3/4 cup granulated sugar, divided
  • 8 ounces cream cheese, softened
  • 2 large eggs
  • 1 cup pumpkin puree
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F and line a square baking pan with parchment paper.
  2. In a bowl, mix graham cracker crumbs, melted butter, and 1/4 cup sugar until combined.
  3. Press the mixture firmly into the bottom of the prepared pan to form the crust.
  4. In another bowl, beat cream cheese with remaining sugar until smooth, then mix in one egg and vanilla extract.
  5. Spread the cream cheese mixture evenly over the crust.
  6. In a separate bowl, whisk pumpkin puree, remaining egg, cinnamon, nutmeg, ginger, and salt.
  7. Gently spread the pumpkin layer over the cream cheese layer.
  8. Bake for 40 to 45 minutes until the center is set.
  9. Cool completely, then refrigerate for at least 2 hours before slicing.
