Pistachio Milk Cake

A soft and moist pistachio milk cake soaked in a creamy milk mixture, topped with fluffy whipped cream and finished with crunchy pistachios. Light, elegant, and deeply comforting in every bite.

Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1/2 cup vegetable oil
  • 1/2 cup milk
  • 1 cup finely ground pistachios
  • 1/2 cup sweetened condensed milk
  • 1/2 cup additional milk for soaking
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 3 tablespoons chopped pistachios

Instructions

  1. Preheat the oven to 350°F and grease a square baking pan.
  2. In a bowl, whisk together flour, baking powder, salt, and ground pistachios.
  3. In another bowl, beat eggs with granulated sugar until light, then mix in oil and milk.
  4. Fold the dry ingredients into the wet mixture until smooth.
  5. Pour the batter into the prepared pan and bake for 30 to 35 minutes until set.
  6. Mix sweetened condensed milk with the additional milk and slowly pour it over the warm cake.
  7. Allow the cake to cool completely and absorb the milk.
  8. Whip heavy cream with powdered sugar until soft peaks form.
  9. Spread the whipped cream evenly over the cake.
  10. Garnish with chopped pistachios, chill, then slice and serve.
