Peruvian Chicken with Green Sauce

Juicy, spiced Peruvian chicken thighs paired with a bold and creamy green sauce made from cilantro, lime, and jalapeños. A flavor-packed dish that’s easy to make and unforgettable.

Ingredients

  • 2.5 pounds chicken thighs (bone-in, skin-on)
  • 2 tablespoons soy sauce
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • 1 tablespoon white vinegar
  • 4 garlic cloves, minced
  • 2 teaspoons smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon black pepper
  • 1 bunch fresh cilantro
  • 2 jalapeños, seeded
  • 1/2 cup mayonnaise
  • 2 tablespoons lime juice (for sauce)
  • 2 garlic cloves (for sauce)
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 425°F or preheat your grill to medium-high heat.
  2. In a bowl, combine soy sauce, olive oil, lime juice, vinegar, minced garlic, paprika, cumin, oregano, and pepper. Add chicken and coat thoroughly. Marinate for at least 2 hours or overnight.
  3. Line a baking sheet with foil or oil grill grates.
  4. Place chicken skin-side up on the tray or grill.
  5. Cook for 35–40 minutes until chicken is cooked through and skin is crisp.
  6. Meanwhile, blend cilantro, jalapeños, mayonnaise, lime juice, garlic, and salt until smooth. Chill if desired.
  7. Serve chicken hot with green sauce and lime wedges on the side.

  • Marinate the chicken overnight for deeper flavor.
  • Use a thermometer to ensure chicken reaches 165°F.
  • Chill the green sauce before serving for best taste.
