Peanut Butter & Jelly Frozen Bark

A creamy, crunchy frozen snack that transforms the classic PB&J into a chilled, swirled bark packed with flavor and texture.

Ingredients

  • 2 cups Greek Yogurt (plain, full-fat)
  • 1/4 cup Peanut Butter (natural, unsweetened)
  • 1/4 cup Jam or Jelly (raspberry or strawberry)
  • 1 tbsp Honey or Maple Syrup (optional)
  • 2 tbsp Freeze-Dried Berries
  • 2 tbsp Crushed Pistachios

Instructions

  1. Clear space in your freezer and line a baking sheet with parchment paper.
  2. In a bowl, mix Greek yogurt and honey or maple syrup (if using) until smooth.
  3. Spread the yogurt mixture onto the parchment-lined baking sheet into an even 1/4-inch layer.
  4. Dollop peanut butter and jelly across the surface. Swirl gently with a spoon or knife to create a marbled effect.
  5. Place the sheet in the freezer and freeze for at least 4 hours, or until completely firm.
  6. Remove from freezer and sprinkle with crushed pistachios and freeze-dried berries, pressing lightly so they stick.
  7. Break into shards and store in an airtight container in the freezer.
  8. Let sit for a few minutes at room temperature before serving.

Notes

  • Use full-fat Greek yogurt for the creamiest texture.
  • Warm thick peanut butter slightly to make it easier to drizzle.
  • Add a sprinkle of sea salt before freezing for flavor contrast.
