One Pan Chicken Gnocchi

A cozy and creamy one-pan dinner featuring tender chicken, pillowy gnocchi, mushrooms, and spinach all simmered together in a rich parmesan garlic cream sauce.

Ingredients

  • 2 tablespoons olive oil
  • 1 pound boneless chicken thighs, sliced
  • Salt and pepper, to taste
  • 3 cloves garlic, minced
  • 1 ½ cups mushrooms, sliced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • ½ cup parmesan cheese, grated
  • 1 pound potato gnocchi
  • 2 cups fresh spinach

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season chicken with salt and pepper, then sear until golden on both sides. Remove and set aside.
  3. Add garlic and mushrooms to the same pan and cook until softened and browned.
  4. Pour in chicken broth and heavy cream, then stir in gnocchi. Simmer until gnocchi softens.
  5. Return chicken to the pan, sprinkle in parmesan, and let everything simmer for 5 minutes.
  6. Fold in fresh spinach and let it wilt. Adjust seasoning as needed.
  7. Serve warm with extra parmesan or a crack of pepper on top.

Notes

  • Use pre-sliced mushrooms to save time.
  • If the sauce thickens too much, add a splash of broth.
  • Substitute kale or arugula for spinach if preferred.
  • Add lemon zest at the end for a fresh twist.
