Oklahoma Onion Beef Burger

Juicy smashed beef patties fused with sweet caramelized onions, melty cheddar, and creamy sauce inside a perfectly toasted bun. This Oklahoma Onion Beef Burger delivers bold diner-style flavor in every bite.

Ingredients

  • 1½ pounds ground beef (80/20 blend)
  • 2 large yellow onions, very thinly sliced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 4 slices cheddar cheese
  • 4 sesame or brioche burger buns
  • 2 tablespoons butter (for toasting buns)
  • ¼ cup mayonnaise (optional)

Instructions

  1. Heat a cast-iron skillet or griddle over medium-high heat until very hot.
  2. In a bowl, season ground beef with salt and pepper, then divide into 4 loose balls.
  3. Lightly oil the skillet if needed, then place a generous handful of onions for each patty on the hot surface.
  4. Place a beef ball on top of each onion pile and smash it flat using a spatula or burger press.
  5. Cook without moving for 2–3 minutes until crispy edges form.
  6. Flip patties with onions attached. Add a slice of cheese on top and cook for another 1–2 minutes until melted.
  7. Toast buns in butter on the skillet until golden and crisp.
  8. Spread mayo on buns if using, stack the patties, and serve hot.

Notes

  • Slice onions paper-thin for best caramelization.
  • Don’t press patties again after the initial smash.
  • Use freshly ground pepper for maximum flavor impact.
  • Double stack the patties for an extra indulgent experience.
