New York Cheesecake

A classic New York Cheesecake with a dense, creamy filling and a buttery graham cracker crust. Rich, smooth, and gently tangy, this timeless dessert is perfect for special occasions or quiet indulgent moments at home.

Ingredients

  • 200 g graham cracker crumbs
  • 100 g unsalted butter, melted
  • 200 g granulated sugar
  • 900 g full-fat cream cheese, room temperature
  • 200 g sour cream
  • 4 large eggs, room temperature
  • 10 ml vanilla extract
  • 2 g salt

Instructions

  1. Preheat the oven to 160°C and lightly grease a 23 cm springform pan.
  2. In a bowl, mix graham cracker crumbs, melted butter, and 50 g sugar until combined.
  3. Press the mixture firmly into the bottom of the pan and bake for 10 minutes. Let cool.
  4. In a large bowl, beat cream cheese with remaining sugar until smooth.
  5. Add sour cream, vanilla extract, and salt, mixing gently.
  6. Add eggs one at a time, mixing just until incorporated.
  7. Pour the filling over the cooled crust and smooth the top.
  8. Bake for 60 to 70 minutes until the edges are set and the center slightly jiggles.
  9. Turn off the oven and let the cheesecake cool inside with the door slightly open for 1 hour.
  10. Refrigerate for at least 4 hours before slicing and serving.

Notes

  • For best texture, chill the cheesecake overnight.
  • Use room temperature ingredients to avoid lumps.
  • Clean the knife between slices for neat presentation.
