Molten Chocolate Lava Cake

Ingredients

  • 4 ounces dark chocolate, chopped
  • 1/2 cup (1 stick) unsalted butter
  • 1/4 cup granulated sugar
  • 2 whole eggs
  • 2 egg yolks
  • 2 tablespoons all-purpose flour
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Butter and cocoa powder for greasing ramekins

Instructions

  1. Preheat your oven to 425°F (220°C). Grease four ramekins with butter and dust them lightly with cocoa powder.
  2. In a microwave-safe bowl, melt the chocolate and butter together in 30-second intervals, stirring until smooth.
  3. In another bowl, whisk the eggs, egg yolks, sugar, and vanilla until thick and pale.
  4. Gently fold the chocolate mixture into the egg mixture.
  5. Sift in the flour and salt, folding just until combined.
  6. Pour the batter evenly into the prepared ramekins, filling each about ¾ full.
  7. Place ramekins on a baking tray and bake for 8–10 minutes, until edges are set but centers are still soft.
  8. Let sit for 1 minute, then run a knife around the edges and invert onto serving plates.
  9. Serve immediately with ice cream, berries, or a dusting of powdered sugar.
