Mini Fruit Tartlets

These Mini Fruit Tartlets are crisp, buttery shells filled with silky pastry cream and topped with a vibrant mix of fresh fruits. They’re elegant, bite-sized treats perfect for entertaining or indulging.

Ingredients

  • 1 ½ cups all-purpose flour
  • ½ cup unsalted butter, cold and cubed
  • ¼ cup powdered sugar
  • 1 large egg yolk
  • 1 tsp vanilla extract
  • 2 cups whole milk
  • ½ cup granulated sugar
  • ¼ cup cornstarch
  • 4 large egg yolks
  • Pinch of salt
  • 2 cups mixed fresh fruits (strawberries, blueberries, kiwi, raspberries)
  • 2 tbsp apricot jam (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Place mini tart pans on a baking sheet.
  2. In a bowl, combine flour, powdered sugar, and salt. Cut in cold butter until crumbly. Add egg yolk and vanilla to form dough.
  3. Roll dough, cut circles, and press into tart pans. Chill for 15 minutes.
  4. Prick dough with fork, line with parchment, and fill with pie weights. Bake for 12 minutes, remove weights, bake 5–7 more minutes.
  5. Heat milk in saucepan. In a bowl, whisk egg yolks, sugar, cornstarch, and salt. Slowly whisk in hot milk. Return to heat, cook until thick. Stir in vanilla, strain, and cool.
  6. Fill tart shells with cooled pastry cream. Top with arranged fruits. Warm apricot jam and brush over fruit.
  7. Chill assembled tarts for 15–20 minutes before serving.

Notes

  • Use ripe but firm fruit for best appearance and texture.
  • Pastry cream and tart shells can be made a day ahead.
  • Brush melted chocolate inside the shell to prevent sogginess.
