Mediterranean Hummus Bowls with Hot Honey Halloumi

A fresh and vibrant Mediterranean bowl featuring creamy hummus, crispy hot honey halloumi, quinoa, and a colorful mix of veggies. This dish is bursting with flavor, texture, and feel-good ingredients.

Ingredients

  • 1 cup uncooked quinoa
  • 1 block (8 oz) halloumi cheese, sliced
  • 2 tablespoons hot honey
  • 1 cup hummus
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 small red onion, thinly sliced
  • 2 cups baby spinach
  • 1/2 cup kalamata olives, pitted and halved
  • 1 cup cooked or canned chickpeas
  • 1/2 cup crumbled feta cheese
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Heat a nonstick skillet over medium-high heat.
  2. Cook quinoa according to package directions. While it’s cooking, prep all vegetables.
  3. Add olive oil to the skillet and sear the halloumi slices for 1–2 minutes per side until golden and crispy.
  4. Drizzle the cooked halloumi with hot honey.
  5. Divide cooked quinoa into serving bowls. Arrange spinach, cherry tomatoes, cucumber, red onion, olives, and chickpeas around the bowl.
  6. Top each bowl with a dollop of hummus and slices of hot honey halloumi.
  7. Sprinkle with crumbled feta, then drizzle olive oil and lemon juice over the top.
  8. Season with salt and pepper to taste. Serve immediately and enjoy!

Notes

  • For extra crunch, add toasted pine nuts or crispy chickpeas.
  • Use store-bought or homemade hummus based on your preference.
  • Swap quinoa with couscous or brown rice for variety.
  • Make it vegan by replacing halloumi and feta with plant-based options.
