Mango Pudding

Creamy, tropical, and irresistibly smooth, this Mango Pudding is a no-bake dessert that brings the taste of summer to your spoon with every bite.

Ingredients

  • 2 cups fresh mangoes or mango pulp, pureed
  • 1 cup heavy cream
  • 1/2 cup whole milk
  • 1/3 cup sugar
  • 2 teaspoons unflavored gelatin powder
  • 1/4 cup cold water
  • 1 tablespoon lime juice (optional)
  • Coconut cream or extra mango, for topping

Instructions

  1. Gather all tools and chill your serving ramekins or glasses in the refrigerator.
  2. In a blender, puree the mango until smooth. Strain to remove any fibrous bits and set aside.
  3. In a saucepan, heat milk, cream, and sugar over medium heat until sugar dissolves. Do not boil.
  4. In a separate bowl, sprinkle gelatin over cold water and let bloom for 5 minutes. Stir into the warm milk mixture until fully dissolved.
  5. Stir in mango puree and lime juice. Mix well until fully incorporated.
  6. Pour the mixture evenly into serving ramekins. Cover and refrigerate for at least 4 hours or overnight.
  7. Before serving, top with coconut cream, extra mango cubes, or a mint sprig.

Notes

  • Use ripe, sweet mangoes for the best flavor. Canned puree works if fresh is unavailable.
  • For a vegetarian version, substitute gelatin with agar-agar.
  • Add a dash of vanilla or cardamom for a subtle flavor twist.
