Lentil Soup

A warm, hearty, and comforting bowl of lentil soup, perfect for chilly days or as a wholesome meal any time. Packed with protein and flavor, this creamy soup is easy to make, budget-friendly, and deeply satisfying.

Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion, finely chopped
  • 2 large carrots, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground turmeric
  • 1 cup dry red lentils, rinsed
  • 4 cups vegetable broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon lemon juice
  • Fresh parsley for garnish

Instructions

  1. Set a large pot over medium heat and add olive oil. Let it warm until shimmering.
  2. Add chopped onion, carrot, and garlic. Sauté for 5 to 7 minutes until the onion is soft and translucent.
  3. Stir in cumin and turmeric. Let the spices toast for about 30 seconds until fragrant.
  4. Pour in the rinsed lentils and vegetable broth. Stir everything together and season with salt and pepper.
  5. Bring the soup to a boil, then reduce to a simmer. Cover and cook for 20 to 25 minutes, until lentils are soft.
  6. Use an immersion blender to puree part of the soup, leaving some chunks for texture. Stir in lemon juice.
  7. Ladle into bowls, garnish with fresh parsley, and serve hot.

Notes

  • To boost richness, sauté onions until golden before adding other ingredients.
  • Stir in chili flakes or a dollop of yogurt for extra depth.
  • Store leftovers in an airtight container in the fridge for up to 4 days or freeze for 2 months.
