Lemon Sugar Dessert Squares

Bright, tangy, and irresistibly soft, these Lemon Sugar Dessert Squares are the perfect balance of sweet and citrusy in every bite.

Ingredients

  • 1 cup unsalted butter, softened
  • 2 cups all-purpose flour (for crust)
  • 1/4 cup all-purpose flour (for filling)
  • 1/2 cup powdered sugar
  • 1/4 teaspoon salt
  • 1 1/2 cups granulated sugar
  • 4 large eggs
  • 2/3 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×13 inch baking dish with parchment paper.
  2. In a mixing bowl, cream together the softened butter, powdered sugar, and salt. Add 2 cups flour and mix until crumbly.
  3. Press the crust mixture evenly into the bottom of the prepared pan. Bake for 15–18 minutes, until just golden at the edges.
  4. While the crust bakes, whisk together the eggs, granulated sugar, 1/4 cup flour, lemon juice, lemon zest, vanilla extract, and baking powder until smooth.
  5. Pour the lemon mixture over the hot crust. Return to the oven and bake for an additional 20–25 minutes, until the center is set but slightly jiggly.
  6. Let cool to room temperature, then refrigerate for at least 1 hour.
  7. Dust with powdered sugar, slice into squares, and serve chilled or at room temperature.
