Ingredients

  • 6 bone-in, skin-on chicken thighs
  • 1/3 cup soy sauce
  • 1/4 cup honey
  • 3 garlic cloves, minced
  • 1 tablespoon freshly grated ginger
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 2 scallions, finely sliced (for garnish)
  • 1 tablespoon sesame seeds (for garnish)
  • Red chili slices (optional, for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C) and set a rack in the center position.
  2. In a mixing bowl, whisk together soy sauce, honey, garlic, ginger, rice vinegar, and sesame oil until smooth.
  3. Place the chicken thighs in a baking dish or sheet pan. Pour the marinade over the chicken and turn to coat evenly.
  4. Let the chicken marinate for at least 30 minutes or up to 24 hours in the fridge.
  5. Bake uncovered for 35–40 minutes, basting once or twice during cooking, until the skin is golden and the sauce is slightly thickened.
  6. Garnish with sesame seeds, sliced scallions, and red chili if using.
  7. Let rest 5 minutes before serving. Enjoy hot over rice or noodles.
