Honey Butter Roasted Chicken

This honey butter roasted chicken is the ultimate cozy comfort dish, featuring crispy golden thighs glazed in a rich honey butter sauce and roasted alongside seasonal vegetables, cranberries, and pecans.

Ingredients

  • 6 chicken thighs (bone-in, skin-on)
  • 5 tablespoons unsalted butter, melted
  • 4 tablespoons honey
  • 4 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups Brussels sprouts, halved
  • 2 cups butternut squash, cubed
  • 1/2 cup dried cranberries
  • 1/2 cup pecans
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat oven to 400°F (200°C) and place your skillet or baking dish inside to warm up.
  2. In a bowl, combine melted butter, honey, garlic, paprika, salt, and pepper until well mixed.
  3. Remove the hot skillet from the oven and add Brussels sprouts and butternut squash in a single layer. Drizzle with a bit of the honey butter sauce.
  4. Place chicken thighs, skin-side up, on top of the vegetables. Brush each with the honey butter mixture.
  5. Roast for 35–40 minutes, basting the chicken halfway through. Add cranberries and pecans in the last 10 minutes.
  6. Let rest for 5 minutes, sprinkle with fresh parsley, and serve warm.

Notes

  • Use room temperature butter for easier mixing.
  • Cover with foil if vegetables start browning too quickly.
  • Add a splash of lemon juice or vinegar before serving for extra brightness.
