Homemade Sour Gushers

These homemade sour gushers are chewy, juicy, and bursting with tangy fruit filling. A fun and nostalgic treat that’s surprisingly easy to make and way better than store-bought.

Ingredients

  • 1 cup fruit puree
  • 3 tablespoons gelatin powder
  • 1/4 cup corn syrup
  • 2 teaspoons citric acid
  • 1/4 cup powdered sugar
  • 1/4 cup fruit juice concentrate
  • 2 tablespoons cornstarch
  • A few drops natural food coloring (optional)
  • 1/4 cup water

Instructions

  1. Place silicone molds in the freezer to chill.
  2. In a small saucepan, combine fruit puree, corn syrup, and water. Slowly stir in gelatin powder and heat until smooth and fully dissolved. Add food coloring if desired.
  3. Transfer gelatin mixture to a piping bag or squeeze bottle. Prepare the juice filling by mixing fruit juice concentrate and cornstarch until slightly thickened.
  4. Fill each mold halfway with gelatin mixture, add a small drop of filling, then top with more gelatin mixture to seal.
  5. Refrigerate the molds for at least 2 hours or until fully set. You can also freeze them briefly for quicker results.
  6. Mix powdered sugar and citric acid in a bowl. Unmold the gushers and toss in the sour mix while still slightly tacky.
  7. Store in an airtight container in the fridge. Enjoy chilled.

Notes

  • Use silicone molds for easy shaping and removal.
  • Let gushers set fully before unmolding to keep their shape.
  • Add more citric acid for an extra sour punch.
  • Natural food coloring adds fun without artificial ingredients.
