Herb Roasted Chicken

This Herb Roasted Chicken is a comforting, golden-skinned classic packed with fresh herbs, garlic, and citrus. Juicy on the inside with a crisp, buttery crust, it’s a perfect dish for gatherings or cozy dinners.

Ingredients

  • 1 whole chicken (about 4 pounds)
  • 3 large carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 1 large yellow onion, quartered
  • 5 garlic cloves, smashed
  • 2 sprigs fresh rosemary
  • 4 sprigs fresh thyme
  • Handful of fresh parsley, chopped
  • 4 tablespoons unsalted butter, softened
  • 2 tablespoons olive oil
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 lemon, halved

Instructions

  1. Preheat oven to 425°F and place rack in the center.
  2. Mix softened butter with chopped herbs, salt, and pepper in a small bowl.
  3. Toss carrots, celery, onion, and garlic with olive oil and spread on the bottom of a roasting pan.
  4. Pat chicken dry. Rub herb butter under the skin and on the surface. Stuff the cavity with lemon halves and remaining herbs.
  5. Place the chicken breast-side up on top of the vegetables.
  6. Roast for about 1 hour and 15 minutes, or until internal temperature reaches 165°F.
  7. Let rest for 10–15 minutes before carving.
  8. Garnish with fresh parsley and serve with roasted vegetables.

  • Letting the chicken come to room temperature before roasting ensures even cooking.
  • Use a meat thermometer to avoid overcooking or undercooking.
