Grinch Brownies

These festive Grinch Brownies combine rich, fudgy chocolate layers with a bright green peppermint frosting, crushed cookies, and red candies for a holiday treat that’s as playful as it is delicious.

Ingredients

  • 1 cup (2 sticks) unsalted butter, melted
  • 2 cups granulated sugar
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup unsweetened cocoa powder
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 3 cups powdered sugar
  • 1/2 cup (1 stick) unsalted butter, softened (for frosting)
  • 1/2 teaspoon peppermint extract
  • 2 tablespoons milk
  • Green gel food coloring, a few drops
  • 1/2 cup red chocolate candies
  • 10 chocolate sandwich cookies, crushed

Instructions

  1. Preheat oven to 350°F (175°C) and line a 9×13 inch baking dish with parchment paper.
  2. In a large bowl, whisk together melted butter and sugar until smooth. Add eggs and vanilla extract, mixing until combined.
  3. Stir in cocoa powder, flour, and salt until just blended.
  4. Pour the batter into the prepared pan and spread evenly.
  5. Bake for 25 to 28 minutes, or until a toothpick comes out with moist crumbs. Let cool completely in the pan.
  6. In a separate bowl, beat softened butter until creamy. Gradually add powdered sugar, milk, peppermint extract, and green food coloring. Beat until smooth and fluffy.
  7. Spread the frosting over cooled brownies. Sprinkle with crushed cookies and press red chocolate candies into the top.
  8. Chill for at least 30 minutes before slicing into squares and serving.

  • Chilling helps the frosting set and makes slicing easier.
  • Use gel food coloring for vibrant color without thinning the frosting.
  • Store leftovers in the fridge in an airtight container.
