Grilled Chicken Panini

A warm and satisfying grilled chicken panini with crispy bread, juicy seasoned chicken, melted mozzarella, fresh spinach, and sweet roasted red peppers, perfect for an easy lunch or comforting dinner.

Ingredients

  • 2 boneless chicken breasts (about 300 g total)
  • 2 large ciabatta rolls, sliced in half
  • 120 g mozzarella cheese, sliced
  • 1 cup fresh spinach leaves
  • 1 cup roasted red peppers, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Instructions

  1. Preheat a grill pan or panini press over medium heat.
  2. Brush chicken breasts with olive oil and season with garlic powder, salt, and black pepper.
  3. Grill the chicken for 5 to 6 minutes per side until fully cooked, then rest and slice.
  4. Assemble the panini by layering chicken, mozzarella, spinach, and roasted red peppers inside the bread.
  5. Lightly brush the outside of the bread with olive oil.
  6. Grill the assembled panini for 3 to 4 minutes per side until the bread is crisp and the cheese is melted.
  7. Remove from heat, slice, and serve warm.

Notes

  • Do not overfill the sandwich to ensure even grilling.
  • Let the chicken rest before slicing to keep it juicy.
  • Use medium heat to avoid burning the bread.
