Green Goddess Chicken Salad

A refreshing and vibrant Green Goddess Chicken Salad made with juicy chicken, crisp greens, creamy avocado, and a homemade herb-packed dressing. Perfect for lunch or a light dinner.

Ingredients

  • 2 cups cooked chicken breast, shredded or chopped
  • 2 cups romaine lettuce, chopped
  • 2 cups butter lettuce, torn
  • 1 large avocado, diced
  • 1 medium cucumber, thinly sliced
  • 1 cup green grapes, halved
  • 3 green onions, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 1 tablespoon fresh tarragon, chopped
  • 1/2 cup Greek yogurt
  • 2 tablespoons lemon juice
  • 1 garlic clove, minced
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a blender, combine Greek yogurt, lemon juice, garlic, olive oil, parsley, tarragon, salt, and pepper. Blend until smooth and vibrant green.
  2. In a large salad bowl, add romaine, butter lettuce, cucumber, green onions, grapes, and chicken.
  3. Drizzle half of the dressing over the salad and gently toss to coat.
  4. Add the diced avocado on top and drizzle more dressing if needed.
  5. Sprinkle with extra herbs for garnish and serve immediately.

Notes

  • Use cold grilled or rotisserie chicken for the best flavor and texture.
  • Only dress the salad just before serving to keep it crisp.
  • Keep the avocado aside until last to avoid browning.
