Gingerbread Pancakes

Fluffy gingerbread pancakes infused with warm spices and molasses, perfect for cozy mornings and comforting breakfasts that feel special yet easy to make.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 2 tablespoons brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 1/4 cups milk
  • 1 large egg
  • 2 tablespoons molasses
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat a nonstick skillet or griddle over medium heat and lightly grease it.
  2. In a mixing bowl, whisk together flour, brown sugar, baking powder, ginger, cinnamon, nutmeg, and salt.
  3. In another bowl, whisk milk, egg, molasses, melted butter, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and gently mix until just combined.
  5. Scoop batter onto the heated skillet and cook until bubbles form on the surface.
  6. Flip and cook the other side until golden brown and cooked through.
  7. Remove from heat and repeat with remaining batter.
  8. Serve warm with butter and maple syrup.

Notes

  • Let the batter rest for 5 minutes for fluffier pancakes.
  • Cook on medium heat to prevent burning the spices.
  • Store leftovers in an airtight container for up to 3 days.
