Fluffy Greek Yogurt Pancakes

Light, fluffy, and full of tangy goodness, these Greek yogurt pancakes are a comforting and protein-packed twist on a breakfast classic.

Ingredients

  • 1 cup All-Purpose Flour
  • 2 teaspoons Baking Powder
  • 1/4 teaspoon Baking Soda
  • 1/4 teaspoon Salt
  • 1 large Egg
  • 1 cup Greek Yogurt (plain, full-fat or 2%)
  • 1/4 cup Milk (any kind)
  • 1 teaspoon Vanilla Extract
  • 1 tablespoon Maple Syrup or Sugar
  • Butter or Oil for cooking

Instructions

  1. Preheat a nonstick skillet or griddle over medium-low heat.
  2. In a bowl, whisk together the egg, Greek yogurt, milk, vanilla extract, and maple syrup.
  3. In another bowl, combine the flour, baking powder, baking soda, and salt.
  4. Stir the dry ingredients into the wet until just combined. Let the batter rest for 5 minutes.
  5. Lightly grease the skillet with butter or oil.
  6. Scoop 1/4 cup of batter onto the skillet for each pancake and gently spread it out.
  7. Cook until bubbles form and edges look set, about 2–3 minutes. Flip and cook the other side for another 2 minutes.
  8. Serve warm with your favorite toppings.

Notes

  • Don’t overmix the batter to keep the pancakes fluffy.
  • Let the batter rest to activate leaveners.
  • Use medium-low heat to avoid burning the pancakes.
  • Freeze leftovers with parchment between for easy storage.
