Falafel Bowls

Crispy falafel, vibrant veggies, fluffy grains, and creamy sauces come together in these flavorful Falafel Bowls, perfect for a wholesome lunch or dinner.

Ingredients

  • 1 ½ cups cooked or canned chickpeas
  • ½ cup fresh parsley
  • ½ cup fresh cilantro
  • 2 garlic cloves
  • ½ small onion
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 2 tablespoons flour or chickpea flour
  • ½ teaspoon baking powder
  • Salt and pepper to taste
  • Olive oil for frying
  • 1 cup cooked quinoa or rice
  • 1 cup cherry tomatoes, halved
  • 1 cup diced cucumber
  • ½ small red onion, thinly sliced
  • 1 avocado, sliced
  • 1 cup spinach or mixed greens
  • ½ cup tzatziki or hummus
  • Lemon wedges for serving

Instructions

  1. Preheat oven to 375°F or heat skillet with olive oil over medium heat.
  2. In a food processor, combine chickpeas, parsley, cilantro, garlic, onion, cumin, coriander, salt, pepper, flour, and baking powder. Pulse until combined but still textured.
  3. Form the mixture into small patties or balls.
  4. Place on a parchment-lined baking sheet or in the heated skillet.
  5. Bake for 20–25 minutes, flipping halfway, or pan-fry for 3–4 minutes per side until golden and crisp.
  6. Meanwhile, prepare the quinoa or rice, and chop all vegetables.
  7. Assemble bowls by layering quinoa, greens, veggies, falafel, and a dollop of tzatziki.
  8. Finish with lemon wedges and serve warm.

Notes

  • Chill falafel mixture before forming for easier shaping.
  • Use parchment paper to prevent sticking if baking.
  • Add sumac or pickled onions for extra flavor pop.
  • Store components separately for meal prep convenience.
