Empanadas

Golden, flaky empanadas filled with savory ground beef, green olives, and a touch of warm spices. A comforting, handheld classic perfect for gatherings or a cozy meal.

Ingredients

  • 3 cups all-purpose flour
  • 1 stick unsalted butter, cold and cubed
  • 1 teaspoon salt
  • 1 large egg
  • 1/2 cup cold water
  • 1 pound ground beef
  • 1 small yellow onion, finely chopped
  • 2 garlic cloves, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • Salt and black pepper, to taste
  • 1/4 cup green olives, sliced
  • 1 hard-boiled egg, chopped
  • 1 additional egg (for egg wash)

Instructions

  1. Preheat oven to 375°F and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together flour and salt. Cut in cold butter until crumbly. Add egg and cold water. Mix until a dough forms. Knead briefly and refrigerate.
  3. In a skillet, cook ground beef with onion, garlic, paprika, cumin, salt, and pepper until browned. Stir in olives and chopped boiled egg. Let cool.
  4. Roll out the chilled dough on a floured surface. Cut into circles using a cutter or small bowl.
  5. Spoon filling into each dough circle. Moisten edges with water, fold, and press to seal. Crimp edges with a fork.
  6. Place empanadas on the baking sheet. Brush with beaten egg.
  7. Bake for 20–25 minutes or until golden brown. Let cool slightly before serving.

Notes

  • Use chilled dough to ensure a flaky crust.
  • Don’t overfill empanadas to prevent leakage.
  • Freeze unbaked empanadas for up to 3 months for easy meals later.
