Ingredients

  • 1/2 cup unsalted butter (softened)
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup mini chocolate chips
  • 4 medium croissants (preferably day-old, sliced lengthwise but not fully split)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, cream together butter, brown sugar, and granulated sugar until smooth.
  3. Add the egg and vanilla extract. Mix well.
  4. Stir in flour, baking soda, and salt until just combined, then fold in chocolate chips.
  5. Slice croissants lengthwise without fully splitting. Lightly toast if very soft.
  6. Add a scoop of chilled cookie dough inside and a larger scoop on top of each croissant.
  7. Place crookies on the prepared baking sheet.
  8. Bake for 10–12 minutes, or until cookie top is golden brown.
  9. Let cool slightly, then serve warm.

Notes

  • Use slightly stale croissants for better structure and texture.
  • Chill cookie dough to help control spreading.
  • Sprinkle sea salt on top before baking for a sweet-salty finish.
  • Customize with nuts, white chocolate, or caramel drizzle.
