Crispy Rice Paper Omelette

Crispy Rice Paper Omelette is a fast, flavorful dish where golden rice paper wraps fluffy eggs and scallions into a savory, crunchy delight. Perfect for breakfast, lunch, or a snack.

Ingredients

  • 2 large rice paper sheets
  • 2 large eggs
  • 1 stalk green onion, finely chopped
  • 1 teaspoon soy sauce
  • Salt and pepper, to taste
  • 1 tablespoon vegetable oil
  • Optional: cheese, herbs, or chopped vegetables

Instructions

  1. Heat a nonstick skillet over medium heat and add a bit of oil.
  2. In a bowl, whisk together eggs, soy sauce, salt, pepper, and green onions.
  3. Lightly soak one rice paper sheet in warm water until just pliable, then lay it flat in the skillet.
  4. Pour half of the egg mixture evenly over the rice paper. Add any optional ingredients if desired.
  5. Cook for 2–3 minutes until the egg sets and the rice paper turns golden and crisp.
  6. Flip carefully and cook for another 1–2 minutes.
  7. Remove and repeat with the second rice paper and remaining egg mixture.
  8. Slice and serve hot with your favorite dipping sauce.

Notes

  • Don’t over-soak the rice paper, or it may tear.
  • Stick to a nonstick pan to avoid sticking issues.
  • Keep fillings minimal to maintain a crispy texture.
  • Reheat in a dry skillet to bring back crispiness.
