Creamy Tuscan Salmon

Creamy Tuscan Salmon is a rich and comforting dish featuring golden-seared salmon fillets nestled in a garlic-parmesan cream sauce with sun-dried tomatoes and fresh spinach. It’s a quick yet luxurious dinner that delivers bold Mediterranean flavors in every bite.

Ingredients

  • 4 salmon fillets (6 oz each)
  • 2 tablespoons olive oil
  • 4 garlic cloves, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 2 cups baby spinach
  • Salt and pepper to taste
  • 1/2 teaspoon paprika
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

  1. Heat a large skillet over medium-high heat and add olive oil.
  2. Season salmon fillets with salt, pepper, and paprika, then sear for 4–5 minutes per side until golden and cooked through. Remove and set aside.
  3. In the same skillet, sauté garlic for 1 minute until fragrant. Add sun-dried tomatoes and cook another minute.
  4. Pour in the heavy cream and bring to a gentle simmer. Stir in parmesan until melted and smooth.
  5. Add spinach and let it wilt into the sauce.
  6. Return salmon to the skillet and simmer for 3–5 minutes to heat through.
  7. Garnish with chopped parsley and serve hot.

Notes

  • Use oil-packed sun-dried tomatoes for richer flavor.
  • Freshly grated parmesan melts smoother than pre-shredded.
  • Add lemon juice at the end for a touch of brightness.
  • Perfect with pasta, rice, or mashed potatoes.
