Creamy Potato Soup

Velvety, hearty, and soul-warming, this creamy potato soup is the ultimate comfort food. Made with simple ingredients like buttery onions, tender potatoes, and rich cream, it’s perfect for cozy nights in or prepping ahead for the week.

Ingredients

  • 3 tablespoons Butter
  • 1 large Yellow Onion, diced
  • 3 Garlic Cloves, minced
  • 2 tablespoons All-Purpose Flour
  • 4 cups Vegetable Broth
  • 3 large Russet Potatoes, peeled and diced
  • 2 medium Yukon Gold Potatoes, diced
  • 1 cup Heavy Cream
  • 1 teaspoon Salt (or to taste)
  • 1/2 teaspoon Black Pepper
  • 1/2 cup Cheddar Cheese, shredded (optional, for topping)
  • 2 tablespoons Chopped Parsley (for garnish)

Instructions

  1. Place a large pot over medium heat and let it warm up.
  2. Melt butter in the pot, then add onions and garlic. Cook until translucent, about 5–6 minutes. Stir in flour and cook for another minute.
  3. Slowly pour in the broth while stirring to prevent lumps. Bring to a gentle boil.
  4. Add both types of diced potatoes to the pot. Reduce heat and simmer for 20–25 minutes until the potatoes are tender.
  5. Use an immersion blender to puree the soup to your desired smoothness. Leave a few chunks if you prefer texture.
  6. Stir in the cream, salt, and pepper. Let it warm through, then taste and adjust seasoning.
  7. Ladle into bowls, top with cheddar cheese and chopped parsley, and serve warm.

  • Swap heavy cream with coconut milk for a dairy-free version.
  • Use cornstarch instead of flour to make it gluten-free.
  • For extra flavor, add a sprinkle of smoked paprika or fresh thyme.
  • Freezes well—just leave out the cream until reheating.
