Creamy Chicken Corn Pasta

A creamy, comforting pasta dish made with tender chicken, sweet corn, and a rich parmesan sauce. Perfect for weeknights and family dinners.

Ingredients

  • 12 ounces bowtie pasta
  • 2 cups cooked chicken, diced
  • 1.5 cups corn kernels (fresh or canned)
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 3/4 cup parmesan cheese, freshly grated
  • 3 cloves garlic, minced
  • 1 small onion, finely diced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped (optional)

Instructions

  1. Bring a large pot of salted water to a boil and cook pasta until al dente. Drain and reserve some pasta water.
  2. In a skillet, heat olive oil over medium heat. Sauté onion and garlic until soft and fragrant, about 3–4 minutes.
  3. Add chicken broth and bring to a simmer.
  4. Stir in cream, cooked chicken, and corn. Simmer for 5 minutes.
  5. Add cooked pasta to the sauce and mix gently to coat.
  6. Stir in parmesan cheese and adjust the sauce with reserved pasta water as needed.
  7. Season with salt and pepper. Add parsley if desired. Serve warm.

Notes

  • Use fresh grated cheese for best flavor and texture.
  • Frozen corn can be used, just thaw and drain first.
  • To reheat, add a splash of broth or milk to loosen the sauce.
