Creamy Cajun Chicken Pasta

Ingredients

  • 1 pound chicken thighs or boneless cuts, sliced
  • 12 ounces penne pasta
  • 1 cup heavy cream
  • 3/4 cup parmesan cheese, freshly grated
  • 2 tablespoons Cajun seasoning
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Heat a large skillet over medium-high heat and bring a pot of water to a boil for the pasta.
  2. Season chicken with Cajun seasoning, paprika, salt, and pepper.
  3. Add olive oil to the skillet and sear chicken for 4 to 5 minutes per side until cooked through. Remove and set aside.
  4. In the same skillet, sauté garlic until fragrant. Pour in cream and bring to a simmer.
  5. Stir in parmesan cheese until the sauce is smooth.
  6. Cook pasta according to package instructions and drain.
  7. Add pasta and cooked chicken to the skillet and toss to coat evenly in the sauce.
  8. Sprinkle with chopped parsley and adjust seasoning to taste.
  9. Serve hot with extra parmesan if desired.
