Ingredients

  • 2 ½ cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 2 tablespoons unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup buttermilk
  • 1 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon white vinegar
  • 2 teaspoons vanilla extract
  • 1 to 2 tablespoons red food coloring
  • 16 ounces cream cheese
  • ½ cup unsalted butter
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat oven to 350°F (175°C). Grease two 9-inch round cake pans and line with parchment paper.
  2. In a large bowl, sift together flour, cocoa powder, baking soda, and salt.
  3. In another bowl, whisk buttermilk, oil, eggs, vinegar, vanilla, and food coloring until smooth.
  4. Pour wet mixture into dry and gently fold until fully combined.
  5. Divide batter between pans, smooth tops, and bake for 30–35 minutes. Cool in pans for 10 minutes, then transfer to racks.
  6. For frosting, beat cream cheese and butter until fluffy. Gradually add powdered sugar, then vanilla, and mix until smooth.
  7. Frost cooled cakes generously and garnish as desired.
