Christmas Cranberry Salad

A festive and refreshing salad that brings together juicy mandarins, crunchy pecans, sweet cranberries, and creamy feta on a bed of fresh spinach, all tossed in a tangy balsamic dressing.

Ingredients

  • 6 cups fresh spinach leaves
  • 3 mandarin oranges, peeled and segmented
  • 1/2 cup pomegranate seeds
  • 1/3 cup dried cranberries
  • 1/2 cup glazed or candied pecans, roughly chopped
  • 1/3 cup feta cheese, crumbled
  • 1/4 small red onion, thinly sliced
  • 2 tablespoons balsamic vinegar
  • 1/4 cup olive oil
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the spinach, mandarin segments, pomegranate seeds, dried cranberries, glazed pecans, red onion, and feta cheese.
  2. In a mason jar or small bowl, whisk together the balsamic vinegar, olive oil, honey, Dijon mustard, salt, and pepper.
  3. Pour the dressing over the salad just before serving.
  4. Toss gently to combine and coat all ingredients evenly.
  5. Top with extra cranberries or pecans for a festive touch.

Notes

  • Make the dressing ahead and store it in the fridge for up to 3 days.
  • Only dress the salad right before serving to keep the spinach crisp.
  • Use a large bowl to avoid overcrowding and ensure even mixing.
