Chocolate Date Truffles

Rich, naturally sweet Chocolate Date Truffles made with wholesome ingredients like Medjool dates, almond butter, and cocoa. No baking required and full of flavor.

Ingredients

  • 1 ½ cups Medjool Dates, pitted and packed
  • ¼ cup Almond Butter
  • ½ cup Rolled Oats
  • ¼ cup Unsweetened Cocoa Powder
  • 1 teaspoon Vanilla Extract
  • ¼ teaspoon Salt
  • 1–2 teaspoons Water (optional, for blending)
  • ¼ cup Shredded Coconut (for rolling)
  • 2 tablespoons Cocoa Powder (for rolling)

Instructions

  1. In a food processor, combine dates, almond butter, oats, cocoa powder, vanilla extract, and salt. Blend until a thick dough forms. Add a teaspoon of water if needed to help it come together.
  2. Line a tray with parchment paper. Scoop out tablespoon-sized portions of the mixture and roll into balls with your hands.
  3. Place the truffles on the tray and chill in the fridge for 15–30 minutes to firm up.
  4. Roll chilled truffles in shredded coconut or cocoa powder for coating.
  5. Serve and enjoy immediately or store in an airtight container.

Notes

  • Soak dates in warm water for 10 minutes if they are dry.
  • Dampen hands slightly when rolling to prevent sticking.
  • Customize coatings with crushed nuts, chia seeds, or spices.
