Chocolate Coconut Bars

Rich, chewy, and irresistibly easy to make, these Chocolate Coconut Bars combine a creamy coconut center with a crisp chocolate shell for the ultimate no-bake treat.

Ingredients

  • 1 can (14 oz) Sweetened Condensed Milk
  • 3 cups Unsweetened Shredded Coconut
  • 1 teaspoon Vanilla Extract
  • Pinch of Salt
  • 2 cups Dark Chocolate Chips or Chopped Bar
  • 1 tablespoon Coconut Oil

Instructions

  1. Line a loaf pan with parchment paper and set aside.
  2. In a large mixing bowl, combine shredded coconut, sweetened condensed milk, vanilla extract, and salt. Mix until fully combined.
  3. Press the mixture firmly into the prepared loaf pan in an even layer.
  4. Place in the freezer for 30 minutes until firm.
  5. Once chilled, cut the mixture into bars or squares.
  6. Melt chocolate and coconut oil in a microwave or double boiler until smooth.
  7. Dip each bar into the melted chocolate using a fork, allowing excess to drip off.
  8. Place the bars on a parchment-lined tray and chill until chocolate sets.
  9. Serve chilled or at room temperature.

Notes

  • Use finely shredded coconut for smoother texture.
  • Add a sprinkle of sea salt on top of the bars for a gourmet finish.
  • Store with parchment paper between layers to prevent sticking.
  • Toasted coconut can be used for a deeper flavor.
