Chicken Tikka Masala

A rich and creamy Indian-inspired curry featuring tender marinated chicken simmered in a spiced tomato and cream sauce. Chicken Tikka Masala is comforting, flavorful, and perfect for cozy nights or special occasions.

Ingredients

  • 1.5 pounds boneless chicken thighs, cut into chunks
  • 1 cup plain yogurt
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 teaspoons garam masala
  • 1 teaspoon paprika
  • 1/2 teaspoon turmeric
  • 1 teaspoon ground cumin
  • 1 1/2 cups tomato puree
  • 3/4 cup heavy cream
  • 1 large onion, finely chopped
  • 1 handful cilantro, chopped
  • Salt to taste
  • 2 tablespoons vegetable oil

Instructions

  1. Preheat your grill, broiler, or skillet over medium-high heat.
  2. In a bowl, combine yogurt, half the garlic, ginger, garam masala, turmeric, cumin, paprika, and salt. Add chicken and mix well. Cover and marinate for at least 1 hour or overnight.
  3. Grill or sear the marinated chicken until browned and slightly charred. Set aside.
  4. In a saucepan, heat oil and sauté onions until golden. Add remaining garlic and ginger, cook until fragrant.
  5. Stir in tomato puree and remaining spices. Simmer for 10 minutes, then add the chicken and cook another 10 minutes.
  6. Stir in heavy cream and simmer until the sauce thickens and turns creamy.
  7. Adjust seasoning and garnish with chopped cilantro. Serve hot with rice or naan.

Notes

  • Marinate overnight for the best flavor.
  • Use coconut cream for a dairy-free version.
  • Add chili powder for more heat.
  • Simmer longer for a thicker sauce.
