Chicken Rice Bowl

A comforting chicken rice bowl made with tender glazed chicken, fluffy rice, and colorful vegetables, perfect for easy weeknight meals or meal prep.

Ingredients

  • 500 g chicken thighs, cut into bite sized pieces
  • 1 1/2 cups uncooked white rice
  • 2 medium carrots, sliced
  • 1 large red bell pepper, sliced
  • 2 small heads bok choy, chopped
  • 3 green onions, sliced
  • 3 tablespoons soy sauce
  • 2 garlic cloves, minced
  • 1 teaspoon fresh ginger, grated
  • 1 teaspoon sesame oil
  • 1 tablespoon vegetable oil

Instructions

  1. Cook the white rice according to package instructions and set aside.
  2. In a small bowl, mix soy sauce, garlic, ginger, and sesame oil.
  3. Heat vegetable oil in a large skillet over medium high heat.
  4. Add chicken pieces and cook until lightly golden.
  5. Pour the sauce over the chicken and stir to coat evenly.
  6. Add carrots and bell pepper and cook until slightly tender.
  7. Add bok choy and cook just until wilted.
  8. Serve the chicken and vegetables over rice and garnish with green onions.

Notes

  • Cut chicken evenly for uniform cooking.
  • Do not overcook the bok choy to keep it vibrant and tender.
  • Add extra soy sauce if you prefer a saucier bowl.
