Cherry Cheesecake Icebox Cake

A no-bake layered dessert featuring rich cream cheese, soft graham crackers, and a sweet cherry pie topping. Light, creamy, and bursting with flavor, it’s the perfect make-ahead treat.

Ingredients

  • Cream Cheese: 16 oz, softened
  • Powdered Sugar: 1 cup
  • Vanilla Extract: 1 teaspoon
  • Heavy Whipping Cream: 2 cups
  • Graham Crackers: About 12–15 sheets
  • Cherry Pie Filling: 1 can (21 oz)

Instructions

  1. Preheat Your Equipment: No need to preheat anything. Just make room in your fridge.
  2. Combine Ingredients: Beat softened cream cheese with powdered sugar and vanilla until smooth. In a separate bowl, whip the heavy cream to stiff peaks. Fold the whipped cream into the cream cheese mixture.
  3. Prepare Your Cooking Vessel: Use a 9×13-inch baking dish. No greasing needed.
  4. Assemble the Dish: Spread a bit of filling at the bottom, layer graham crackers, half the filling, half the cherry topping, then repeat.
  5. Cook to Perfection: Cover and chill in the fridge for at least 6 hours or overnight.
  6. Finishing Touches: Once chilled, remove cover and prepare to slice.
  7. Serve and Enjoy: Cut into squares and serve cold.

Notes

  • Use full-fat cream cheese for best texture.
  • Chill overnight for cleanest slices.
  • Use a warm knife to slice neatly.
  • Top with fresh cherries or whipped cream for extra flair.
