Ingredients

  • 1 cup granulated sugar
  • 2 cups whole milk
  • 1 cup heavy cream

  • Pinch of salt

Instructions

  1. Preheat your oven to 325°F (160°C) and place a roasting pan inside.
  2. In a saucepan over medium heat, melt the sugar until it turns amber, swirling gently. Pour into ramekins or a baking dish.
  3. In a bowl, whisk eggs, milk, cream, vanilla, and salt. Strain the mixture through a fine sieve.
  4. Place ramekins in the roasting pan and fill with hot water halfway up the sides.
  5. Pour custard mixture into the ramekins over the caramel.
  6. Bake for 40–50 minutes until set but slightly jiggly in the center.
  7. Remove from water bath and cool completely. Chill for at least 4 hours.
  8. Run a knife around the edges and invert onto plates to serve.

  • Use a thermometer for precise caramel temperature (around 340°F).
  • Always strain the custard for a silky texture.
  • Cool thoroughly before serving for best results.
