Breakfast Quesadilla

A warm and crispy breakfast quesadilla filled with fluffy scrambled eggs, melted cheese, and savory sausage, perfect for busy mornings or relaxed brunches.

Ingredients

  • 2 large flour tortillas
  • 4 large eggs
  • 1 cup shredded cheddar cheese
  • 1 cup cooked breakfast sausage, crumbled
  • 1 tablespoon butter
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

  1. Crack the eggs into a bowl, add salt and black pepper, and whisk until smooth.
  2. Heat a nonstick skillet over medium heat and melt the butter evenly.
  3. Pour in the eggs and cook gently, stirring until just set, then remove and set aside.
  4. Place one tortilla in the same skillet and sprinkle half of the cheese evenly.
  5. Add the cooked eggs and sausage, spreading them evenly.
  6. Top with the remaining cheese and place the second tortilla on top.
  7. Cook for 2 to 3 minutes per side until golden brown and the cheese is fully melted.
  8. Remove from the skillet, let rest briefly, slice into wedges, and serve warm.

Notes

  • Cook eggs on medium low heat to keep them soft and fluffy.
  • Use freshly shredded cheese for the best melt.
  • Reheat leftovers in a skillet to keep the tortilla crispy.
