Brazilian Creamy Chicken Stroganoff is a comforting and flavorful dish featuring tender chicken simmered in a rich tomato and cream sauce. It’s a weeknight favorite that’s quick, customizable, and perfect for leftovers.

Ingredients

  • 1.5 pounds chicken thighs (boneless, skinless)
  • 1 medium yellow onion, finely chopped
  • 3 garlic cloves, minced
  • 1/3 cup ketchup
  • 1 tablespoon tomato paste
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium-high heat until shimmering.
  2. Add chicken pieces to the pan, season with salt and pepper, and sear until golden brown, about 5 to 7 minutes.
  3. Reduce heat to medium. Push chicken to one side and add butter, chopped onions, and garlic. Cook until softened and fragrant.
  4. Stir in tomato paste and ketchup. Let it bubble slightly, then mix with the chicken.
  5. Pour in the heavy cream. Stir well and let simmer on low heat for 8 to 10 minutes until sauce thickens.
  6. Adjust seasoning with salt and pepper if needed. Add fresh parsley before turning off the heat.
  7. Serve hot with white rice and crispy potato sticks.
